SUS

As well as White paper called as Shiro-gami and Bule paper called as Ao-gami, SUS is one of the stainless steels developed by Proterial, Ltd. and is also known as Silver paper called as Gin-gami.

Gin-gami No. 5 is based on the SUS 420 series defined by Japanese Industrial Standards, with increased carbon content and reduced impurities to improve hardness and toughness.

Gin-gami No. 3 is based on Gin-gami No. 5 with increased carbon content.

Gin-gami No. 1 is made by increasing the amount of chromium and adding molybdenum to improve corrosion resistance.

Gin-gami No. 3, which has the highest hardness, is favoured by chefs and is extremely popular, but it is said to be susceptible to chipping.
