This traditional Japanese deba knife is designed for precise fish butchery — from filleting to portioning.

Available in 165mm (6.5") and 180mm (7.1") sizes, the blade is forged from high-carbon Shirogami steel (White #1), prized for its sharpness and clean edge profile. With a thick spine and single-bevel geometry, it offers confident control for slicing through bones, skin, and delicate flesh.

The natural wood handle offers a warm, tactile grip and balances the heft of the blade. Whether used in a home kitchen or a professional sushi restaurant, this knife delivers performance rooted in tradition.
